This 15th-century is home to an artisan producer of Cognac and Pineau des Charentes. The Cognacs are distilled from the traditional grape varieties in four small copper pot stills, which generate a wealth of fruity aroma compounds compared to larger stills. Beaulon pride themselves on ageing their Cognac well beyond the legal minimum for each level, resulting in a wonderful blend of aromatic spirit and smooth wood. The Pineau des Charentes is a local speciality in which year-old Cognac is blended with freshly pressed grape juice – Sémillon and Sauvignon for the white, Cabernet and Merlot for the red. It is then matured for five or ten years in wood, giving a sweet, mellow, very fruity apéritif.
